Perfect Pani Puri | Golgappa

Pani puri is a road side dish made with suji and maida.

Ingredients:

*1cup = 250 ml

Rava / Suji - 1 1/2 cup
Maida / AP Flour - 3 tbsp
Salt - 1/2 tsp
Baking Sosa - 1 tsp
Water - 1/2 cup + 2 tbsp + 1 tsp
Oil - 1/4 lit


How to make?

  1. In a bowl, add all dry ingredients;Mix until thoroughly combined. 
  2. Add 1/2 cup of water;knead for 3 mins well.
  3. Then add 2 tbsp and 1 tsp of water;Dough should be sticky.
  4. Cover with a damp cloth for about 30 mins.*Crucial step
  5. After 30 mins,knead for 1 min;
  6. Do not make a lot of poori at one go!
  7. Make a small balls and roll it; Sprinkle little maida while rolling .
  8. Fry the poori at medium hot oil;
  9. As soon as the poori swell up, lower the flame.*Crucial step
  10. Flip the poori in between; don't fry a lot of poori together.
